It took me just over 34 years but I finally like dill pickles.
I’ve been working my way up to eating a dill pickle on it’s own, straight from the jar. I like dill. I like cucumbers. I even like sweet pickles. But the dill pickle scared me. I started with deep fried pickles with ranch dressing. Hey, this is the South, we’d eat our shoe laces if we could fry em up and serve em with a good dipping sauce. Then I moved on to a couple of slices on a burger. I survived. Then the other night Jon was eating some baby dills straight out of the jar. I smelled them first, not bad. Then he speared one for me on his fork and handed it over. I looked at it and worked up my nerve. Just as I was about to take my first bite CSP asked “Well, can I at least have my fork back?” Then I ate it. And it was good.
So now, me, I’m a pickle eater. I feel more grown up now. Next hurdle: asparagus.

Have you ever tried the pickle (cream cheese & pastrami or corn beef) appetizers? They are addictive. Big up here in the Midwest. If not, you take 2 slices of buddig’s pastrami or cornbeef & spread cream cheese on them, overlapping the edge to make a one long piece. Then you take a kosher dill pickle, dry it off and roll it up in the meat. Put in fridge for a while to firm up, then slice. YUM!!!
Regarding Asparagus, you have to roast it in the oven & it is wonderful. Quick and easy!! Trim about an inch from stem, wash and dry asparagus. I put it on a foil lined jelly roll pan, then drizzle with olive oil, sprinkle with salt and pepper, toss to coat. Cook under the broiler for 8-16 minutes (depending on thickness), tossing/turning half way through cooking time. We are having asparagus tonight! Wonderful, but your urine will smell funny for the next 12-24 hours. Weird but true!

LOL! It’s brussel sprouts and cabbage that I refuse to eat, but I do love me some dill pickles. And asparagus.

Oh girl I could make you asparagus that would leave you BEGGING for more… I’m so serious. It took me until I was in my 30’s to love it, but now it’s my fave.
Try this: on a cookie sheet spread it out and dust with olive oil and minced garlic clove (don’t overdo on the garlic)- then bake in the oven (I think my sis always does this on broil, just for like a minute- we like our asparagus a little firm, but I’ve had it soft and it’s just as good). OR, you can do this wok fashion too with the same ingredients. Totally simple and oh so yummy in the tummy. After you brush the olive oil and put the garlic on, let it sit for a bit to soak in some of the oil.

LOL! The one thing I absolutely cannot stand is pickles. I have no idea why, maybe it’s the texture or something. My husband could eat a jar full and I nearly gag at the tought of a pickle even touching my sandwich.

I don’t care to eat a pickle but I can drink the juice and love to drink the pickle juice…I wish they would sale jars of just pickle juice. I will get the juice out of the pickle jar and it drives the husband crazy because he says it deflates the pickles:) I L-O-V-E asparagus, too.

Dill pickles are a staple in our home, just like bread, milk, eggs, etc… I eat them almost daily. If you can get past the salt, they are a great low-carb, lower calorie snack. I like the big crunchy Clausin’s ones. Yum.
